Fried plantain salad

Fried plantains are a type of banana native to tropical regions, larger than the common banana and are consumed as a staple ingredient in many cultures. A versatile fruit, they are usually served cooked, like in this Cameroonian fried plantain salad from Ashley Vola.

Ingredients

  • 3 whole plantains
  • Vegetable oil, for frying
  • Salt
  • 3 cooked corn cobs, kernels stripped
  • 200 g green beans, blanched, cut into 2 cm lengths
  • 2 avocadoes, diced
  • 1 each green, red and yellow capsicums, finely chopped
  • 3 spring onions, thinly sliced
  • 1 small red onion, finely chopped
  • 1 cup flat-leaf parsley leaves, roughly chopped
  • 1 cup basil leaves, roughly chopped
  • 2 tbsp pepitas
  • 1 cup cooked quinoa
  • 1 lemon, cut into wedges, to serve
For the spicy orange dressing
  • ½ cup freshly squeezed orange juice
  • ¼ cup (60 ml) olive oil
  • 2 garlic cloves, finely grated
  • 2 cm x 3 cm piece ginger, finely grated
  • 1 habanero chilli, finely chopped
  • Salt and black pepper

Instructions

  1. Trim the ends of the plantains, then peel and cut into half-moons, 7 mm thick.
  2. Heat a generous drizzle of vegetable oil in a large frying pan over medium-high heat. Once hot, fry the sliced plantain for 2-3 minutes on both sides, or until golden. Transfer the fried plantains to a paper towel-lined plate and sprinkle with salt.
  3. To make the spicy orange dressing, combine the ingredient in a screw-top jar and shake well to combine. Season to taste with salt and pepper.
  4. Combine the remaining ingredients for the salad (except the lemon) with the fried plantains in a large salad bowl and drizzle with the spicy orange dressing. Toss lightly to combine.
  5. Serve the fried plantain salad with lemon wedges for squeezing.

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
