Ingredients

  • 1 shot espresso
  • 1 tbsp maple syrup
  • 2 tbsp dark brown sugar
  • 15 ml bourbon
  • 12 slices thick-cut streaky bacon

Instructions

  1. Preheat oven to 160°C.
  2. Mix together espresso, maple syrup, sugar and bourbon, until the sugar dissolves.
  3. Lay out bacon. Using a pastry brush, brush both sides of bacon with the coffee glaze.
  4. Bake, basting every 5 minutes for 15-20 minutes. When removed from the oven, bacon will be soft but will harden upon cooling. Use as a garnish for drinks or savoury dishes.
